La nuova cantina di Sassodisole, nel cuore delle campagne della Val d’Orcia, rispecchia in pieno i colori e lo stile di uno dei territori vitivinicoli più famosi nel mondo
A guidarci alla scoperta della struttura, il titolare, Roberto Terzuoli, nato e cresciuto tra le vigne, la cui famiglia è impegnata nella produzione di vini dal XVII secolo.
Una cantina vicino Montalcino dove si produce vino da generazioni
I vigneti di Sassodisole si trovano nella parte Nord- Est di Montalcino, all’interno del parco della Val d’Orcia, patrimonio dell’Unesco.
Dieci ettari, situati a un’altitudine compresa tra 280 e 320 mt sul livello del mare, coltivati interamente a Sangiovese Grosso che circondano la nuova struttura destinata a conservarne le uve dopo la vendemmia.
“La struttura, tutta in pietra e costruita senza l’utilizzo del cartongesso, è in armonia con la campagna ilcinese e le sue sfumature– ci spiega Roberto -. Abbiamo voluto dar vita a una cantina che potesse rispecchiare il nostro modo di fare vino, che accosta ai dettami della tradizione le nuove tecnologie a disposizione del settore enologico. Per questo, entrando, tutto ci farà capire di essere all’interno di una tipica struttura toscana, ma da piccoli dettagli sarà possibile capire la modernità e lo studio che c’è dietro”.
Ne è un esempio l’impianto di areazione e climatizzazione, costruito affinché non ci fosse dispendio eccessivo di energia. “Per noi era importante trasferire il rispetto della natura e del territorio che mettiamo in vigna anche nella nuova cantina – continua Roberto -. La sua bellezza e unicità sta anche in questo”.
La particolarità della cantina
Quella che sembra essere una normale struttura in muratura nasconde, in realtà, un particolare unico. “Abbiamo voluto utilizzare le pietre provenienti dalla vigna, perché volevamo che passasse forte il messaggio di quanto i nostri vini e la nostra azienda siano legati al territorio – ci svela Roberto -. Le nostre radici affondano qui da sempre e siamo consapevoli che tutto ciò non potrebbe esistere lontano da questo luogo unico. Ora, le nostre etichette hanno una casa perfetta in cui riposare”.
Sassodisole ha da poco presentato il nuovo Brunello di Montalcino 2016, un’annata che ha sorpreso tutti, raggiungendo persino i livelli di apprezzamento della 2015. Tra le etichette che si potranno assaggiare nella nuova cantina, anche Bruno, la selezione di Brunello di Montalcino dedicata da Roberto al padre.In estate, continuano le visite in cantina a Montalcino. To guide us to the discovery of the structure, the owner, Roberto Terzuoli, born and raised in the vineyards, whose family has been involved in the production of wines since the seventeenth century.
A winery near Montalcino where wine has been produced for generations
The vineyards of Sassodisole are located in the north-east of Montalcino, within the park of the Val d’Orcia, a UNESCO World Heritage Site.
Ten hectares, located at an altitude of between 280 and 320 meters above sea level, cultivated entirely with Sangiovese Grosso, surrounding the new structure intended to preserve the grapes after the harvest.
“The structure, all in stone and built without the use of drywall, is in harmony with the countryside of Montalcino and its nuances- explains Roberto -. We wanted to create a cellar that could reflect our way of making wine, that combines the dictates of tradition with the new technologies available to the wine industry. For this, entering, everything will make us understand that we are inside a typical Tuscan structure, but from small details it will be possible to understand the modernity and the study that is behind ”.
An example of this is the ventilation and air-conditioning system, built so that there was no excessive waste of energy. “For us it was important to transfer respect for nature and the territory that we put in the vineyard also in the new winery – continues Roberto -. Its beauty and uniqueness is also in this”.
The peculiarity of the cellar
What seems to be a normal masonry structure hides, in reality, a unique detail. “We wanted to use the stones from the vineyard, because we wanted to pass the message of how much our wines and our company are related to the territory – reveals Roberto -. Our roots have always been here and we are aware that all this could not exist far from this unique place. Now, our labels have a perfect home to rest in”.
Sassodisole recently presented the new Brunello di Montalcino 2016, a vintage that surprised everyone, reaching even the levels of appreciation of 2015. Among the labels that can be tasted in the new winery, also Bruno, the selection of Brunello di Montalcino dedicated by Roberto to his father.
